Why is it called a ‘New York’ strip steak, anyway?
SUMMARY: The strip steak, also known as New York strip or Kansas City steak, became popular in steakhouses like Delmonico’s in New York City, where it was sometimes called a “Delmonico” cut. Texas Lt. Gov. Dan Patrick is advocating for renaming the New York strip steak to “Texas strip” to honor Texas’s significant beef industry. He asserts that New York shouldn’t receive credit for the steak, which Texas produces largely. Despite this push, many Texas restaurants still use the original name. Delmonico’s owner argues that the name reflects a historical culinary tradition that cannot be easily changed.
