SUMMARY: My windowless office, where I’ve worked for 27 years, is a source of inspiration filled with personal memorabilia, including family photos, Beatles pictures, quirky trinkets, awards, and notably, a vast cookbook collection. My assistant, Simeon Williford, recently organized the approximately 1,200 cookbooks I’ve amassed over four decades; the task was daunting, given additional books stored elsewhere. Having read every cookbook, they fuel my passion for food and influence my culinary creations. Although I frequently use my own published cookbooks, the entire collection remains integral to my journey as a chef. I’ve listed my top 25 cookbooks, which include influential works from both renowned chefs and local sources, reflecting my evolving preferences and professional inspiration.

MCBB: Ole Miss moves up to No. 16, Mississippi State returns to rankings in latest AP top 25

Bird flu confirmed in flock of Greene County chickens

SUMMARY: Officials have confirmed that a chicken flock from a commercial breeder in Greene County, Mississippi, has tested positive for H5N1 avian influenza (bird flu). The Mississippi Board of Animal Health noted that the poultry poses no food safety risk when handled and cooked correctly. The affected premises are quarantined, and the flock has been depopulated to prevent disease spread, with no birds entering the food system. This is the first case of highly pathogenic avian influenza in Mississippi’s commercial poultry since spring 2023. Southern Miss men’s basketball beats Marshall to open Sun Belt play

SUMMARY: The Southern Miss men’s basketball team secured a 68-66 win over Marshall in their Sun Belt opener, aided by a strong crowd of over 3,200 fans at Reed Green Coliseum.
