What's cooking at Tulane University?
SUMMARY: Lane University is expanding students’ culinary options with a popular vegetarian dish, Gumbo Zab, featuring seven different greens. Chef Rese Skinner demonstrated the preparation, which starts with a flavorful brown roux and incorporates garlic and a mix of hearty greens like mustard and collard greens, along with lighter greens such as spinach and arugula. This healthier alternative caters to students seeking cleaner eating options, especially those with dietary restrictions. The dish offers the essence of traditional gumbo without meat. Additionally, Chef Skinner plans to offer cooking classes this spring, allowing students to learn and take a taste of New Orleans with them post-graduation.

SUMMARY: Maribeth Holer and Haley Holley from the Was Parish School System discussed Louisiana’s new K-12 state accountability system. The system now focuses on three categories: Achieve, Growth, and Thrive. Achieve measures student performance on tests, while Growth evaluates year-to-year progress. Thrive, specific to high schools, considers graduation rates, college and career readiness, and work-based learning experiences. The system will use a sliding scale rather than fixed target scores, with schools ranked in categories from A to F. The goal is to emphasize student growth, with updates available on the Department of Education’s website and social media channels.

Wellness Wednesday on 4: How much exercise is needed to help with weight loss?
SUMMARY: Recent studies, including a meta-study published in the Journal of the American Medical Association Network, show that weight loss through exercise is more complex than previously thought. For effective weight loss, 150 minutes of exercise per week can reduce visceral fat, while 300 minutes is necessary for significant weight loss. Combining exercise with a calorie-controlled diet is most effective. Additionally, muscle loss during weight loss, especially with medications like Ozempic and Wegovy, is a concern, as it can slow metabolism. Resistance training is essential to prevent muscle loss, ensuring long-term health benefits.
